In this blog, we’re diving into the sweet side of Easter with two show-stopping recipes: a luscious Cannoli Pie that tastes like an Italian bakery dream, and a bright, berry-kissed Strawberry French Toast that’s perfect for Easter morning. No-Bake Cannoli Pie – Step-by-Step Guide for Beginners

Perfect for Easter, Mother's Day, or any sweet craving! This easy, no-bake recipe comes together in minutes with simple steps—no fancy baking skills needed. Just mix, chill, and enjoy!


Ingredients List

Waffle Cone Crust:

  • 2 cups crushed waffle cones
  • 1/4 cup melted butter
  • 2 tbsp sugar
  • 2 tbsp crushed pistachios

Creamy Cannoli Filling:

  • 1 cup ricotta cheese
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla extract
  • Zest of 1 orange

Toppings (Make it Fancy! ):

  • Whipped cream
  • Extra mini chocolate chips
  • Crushed pistachios
  • A dusting of powdered sugar

 Step-by-Step Instructions

Make the Crust

 Prep time: 5 min

  1. Place the waffle cones in a zip-top bag and crush them using a rolling pin OR pulse in a food processor. (You want fine crumbs.)
  2. In a bowl, mix the crushed waffle cones with melted butter, sugar, and crushed pistachios.
  3. Pour the mixture into a pie dish and press it down firmly using the back of a spoon or measuring cup.
  4. Place the crust in the fridge while you make the filling. (This helps it set.)

Whip the Filling

 Prep time: 5 min

  1. In a large bowl, mix ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and orange zest.

  3. Gently fold in the mini chocolate chips.

Assemble the Pie

  1. Take the chilled crust out of the fridge.

    • 1 loaf brioche or challah, cubed
    • 6 large eggs
    • 2 cups half-and-half
    • ½ cup maple syrup
    • 1 tbsp vanilla extract
    • 1 tsp cinnamon
    • ½ tsp salt
    • 1½ cups fresh strawberries, sliced
    • ½ cup mascarpone or cream cheese
    • 2 tbsp butter, melted
    • ¼ cup brown sugar
  • For the Strawberry-Infused Maple Syrup:
    • 1 cup maple syrup
    • ½ cup fresh strawberries, chopped
    • 1 tsp lemon zest
    • 1 tsp vanilla extract

3. Step-by-Step Instructions

  1. Prepare the Base: Arrange half the brioche in a greased baking dish, layer with mascarpone and strawberries, and top with the remaining bread.
  2. Make the Custard: Whisk eggs, half-and-half, maple syrup, vanilla, cinnamon, and salt. Pour over bread.
  3. Top & Rest: Drizzle melted butter, sprinkle brown sugar, and let it soak for at least 30 minutes.
  4. Bake: 375°F for 35-40 minutes until golden brown.
  5. Here’s the real special part of this recipe.  Make the Syrup: Simmer maple syrup, strawberries, and lemon zest for 5-7 minutes. Stir in vanilla extract.
  6. Serve warm.
